Harvesting all the fresh vegetables from the garden.
Well it was time to pick the remaining cobs of corn. Oh how sweet they were.
The cucumbers were on the small side, but the zucchini made up for it.
Swiss chard was plentiful and still growing.
The radicchio was so tasty in the fresh salad.
There's nothing like picking fresh tomatoes,
basil, onions, oregano, cilantra.
That sounds like a great mix for Salsa.
"Salsa Time"
Gather all your fresh vegetables.... Here's what you will need
8 cups of coarsely chopped and peeled tomatoes
1 cup chopped spanish onion
1 sweet green pepper
1 chopped sweet red pepper
1 hot banana pepper seeded and chopped
6 hot chili peppers
3 large cloves of garlic minced
1 large can of tomatoe paste
1/2 cup white vinegar
2 tbls sugar
2 tbls lime juice
2 tbls Pickling salt
1 tsp of paprika
2 tbls finely chopped cilantra
1 tsp fresh oregano
1/2 cup fresh basil chopped
I added a little sweet by adding 3 peeled and chopped fresh pears from our tree.
Combine all ingredients, bring to a boil stirring constantly.
Reduce heat and simmer for
15 minutes. Pour into sterilized jars.
My batch made 4 quarts and 1 litre

That sounds and looks delicious! We didn't plant a garden this year and I really missed the fresh tomatoes. I've been buying them at the Amish market and they have been costly. Hope you have a wonderful day, Gail
ReplyDeleteLooks like you had a successful garden this year! We love salsa. I'm going to have to show your recipe to my husband and see if he wants to try out this recipe. That's such a good idea to use all the tomatoes up that way. We have too many. We have never "canned" before. Looks like we need to start doing that.

Everything looks so delicious!! Corn!?! I've never been successful with corn, we have a lot of farmers around here so I leave it to them now. lol Expensive, but yummy.
ReplyDeleteI still have loads of tomatoes, peppers & hot peppers to harvest and a salsa is my next project. My cilantro didn't do very well this year so I'll have to purchase more. Your recipe looks very interesting with the pears in it!
