Who's Coming for Dinner????

Who's coming for dinner


It's been a cooler day here in Ontario. Makes you want to bake. So off to the garden to pick a large zucchini. Time to make zucchini bread.


Here is a yummy recipe from my friend Janet.
Pre- heat oven at 325 degrees
Grease and flour 2 loaf pans 9x5

3 eggs
2 c sugar
2 tsp vanilla
1 c oil (canola)
3 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp nutmeg
1 tsp cinnamon
1 tsp salt

add to the mixture
1 1/2 c of chopped nuts or choc chips and dried cranberries
3 cups of zucchini

mix well
Bake for 1 hour. (set your timer)
Yummy we had this with our dinner and a fresh ceasar salad with chicken, cherry tomatoes fresh from the vine,steamed green beans freshly picked and to top it all off for dessert we had custard.
  

 with strawberries.I hope you enjoyed your meal...

  1. Sounds yummy Linda. I have not had zucchni bread in a while. My Mom makes a fresh loaf for me now and again but I've never tried it myself. You might have inspired me, unless Mom comes through again soon. Have a great day!

  7. YUM! I wish I were close enough to come for dinner cause I sure would pop in! I have never made zucchine bread even tho we raise it every year and always have plenty. I will have to make it a point to make some next year. Our garden burned up a little early this year due to the drought.

  9. I've never had zucchini bread, one day I'll try it, but I'm not a fan of carrot cake or banana bread so I thought I wouldn't like this either. (people think I'm nuts not liking those! lol)
    But ok, I had to click to enlarge the picture...couldn't figure out what a stack of pancakes was doing in the middle of your post...with a syrup bottle on top, to boot! What an incredible timer!! Love it!

  12. Oh that looks good! I don't think I've ever had zucchini bread before. We're still harvesting veggies out of our garden, but didn't plant any zucchini. May need to try that next year.

  14. My hubby loves zucchini bread, and I grew plants for him this year so I could make bread and maybe freeze some shredded for use in the winter. Your recipe looks really good!

  16. My mouth is watering for you have touched my taste buds with all the delicious food. The zucchini bread sounds wonderful and I haven't had any for a long time! We are on a low carb diet because of my huband but zucchini bread will be coming back soon for me to taste!

  17. We tried to grow zucchini but the squirrels kept nibbling on them before I could get them picked! We had to give up on all squash, and just grow what they didn't like. I love zucchini bread and you have inspired me to make some. It is so moist and flavorful and freezes really well. Your custard looks yummy, too! Thanks for sharing!
