What's cooking......On the Menu



                    Rainy spring days.....I guess that's what April is.....

               So I thought I would share some comfort food.....

Mashed potatoes
brown beans
parmesan chicken

That's what was on our menu last night....

Parmesan Chicken.....

                                            I use Coconut oil in a hot pan....
                                            1/2 cup parmesan cheese
                                            1 cup of bread crumbs
                                            1 slightly beaten egg
                                            2 chicken breasts skinless and boneless
           
                                 Dip chicken in the egg then into a plastic bag with the
                                 parmesan and bread crumbs...
                                 shake, shake, shake,...
                                  now fry.....at medium heat turning and turning as to not
                                        burn.....about 20 minutes...

                            Easy eh!!





                                             Look how moist the chicken is.....



Then came the dessert.....



                                                        Custard Pudding


I don't make it from scratch....sorry..... I take the easy road....



Bird's custard powder
2 1/2 cups of milk
3 tablespoons of custard  powder
3 tablespoons of sugar

mix in a saucepan over medium heat stirring frequently till
it bubbles and thickens up.

I put berries in the bottom of my serving dishes 
 what I have on hand...
frozen blueberries.
Then pour into the serving dishes and chill in the fridge

When you are ready to serve add a dollop of  Kool Whip...

Yummy!
 A great source of calcium!

  5. My mother used to make custard pudding for us at least once a week!! Birds too! There's always a can of it in my pantry, usually reserved for trifle making.
