Had leftovers from last nights dinner.....
Since it snowed most of the day I thought I would make us a hearty Casserole.
Doesn't this look yummy.....
So here is my recipe.
cut up chicken leftovers about 4 cups.
1 celery stalk chopped
1/2 spanish onion chopped
1 whole carrot diced
1 can of cream of mushroom soup
1 1/2 cup of milk (I use skim)
4 leftover potatoes chopped into cubes
frozen peas 2 cups
1 tsp salt and pepper
a dash of poultry seasoning
1 tbsp of butter
1/2 cup of flour
Saute your onion and celery and carrot in butter
then add your other ingredients.
add flour to a bit of milk to make a paste then add it to the mix.
simmer.
watch that it doesn't stick to the bottom of your pan.
Pour in to 2 1/2 quart dish
Now you are ready for the biscuit topping
2 cups all purpose flour
4 tsp of Baking powder
2 tsp of sugar
1/2 tsp salt
1/2 tsp of cream of tarter
blend then add 1/2 cup of butter
mix till crumbly
then add your 2/3 cup of milk.
Make sure it is sticky.
Roll out onto a floured board and knead .
then you are ready to roll out the pastry
I use these cutters
then layer them around the top of your mix.
I filled in spaces with leftover pastry.
Bake at 400 degrees for 20 minutes.
serves 4 to 6 people
I guess you could use leftover turkey as well.

ReplyDeleteOh, this sounds delicious! I have a recipe using leftover chicken or turkey and noodles but I would much rather the biscuit topping. Thank you for sharing the recipe with us. Hope you're off to a wonderful week. We haven't received any snow here on PE Island yet and I hope it holds off for a while yet!
